Lapsang Souchong Muffins

Serves: 12

Ingredients: 

  • 2 eggs
  • 100ml vegetable oil
  • 100ml milk
  • 200g caster sugar
  • 375g self-raising flour
  • 1 tsp baking powder
  • 1 tsp fine lapsang souchong tea leaves
  • A pinch salt
    Icing sugar to dust

Method: 

  • Heat the oven to 180°C and line a baking
    tray or muffin tin with 12 muffin cases.
  • Attach the K beater add the eggs, oil and
    milk and mix on a medium speed, slowly add
    the sugar and mix until dissolved.
  • Add the remaining ingredients and mix well
    until fully combined and smooth.
  • Fill each case two thirds full and bake for
    about 20 minutes until risen and golden.
  • Dust with icing sugar and serve.
