Good control of cooking temperatures keeps frying and boiling fairly consistent. Timing down the simmers allows one to leave it alone while occupied with other things.

Passed the oats cooking test. It didn't boil over on simmer and the bonus was timing it to end cooking, avoid drying it out too much. All that while focused on pulling a good coffee brew the other side of the kitchen!
